It would be understandable for you to confuse the aforementioned symptoms with those of a food allergy, but food allergies and food intolerances are actually quite different in their causes. A food allergy is a histamine reaction by the immune system to a perceived threat, the food or other substance you are allergic to. This reaction tends to come on quickly after the person ingests the allergen, so it can be fairly easy to tie the cause to the effect.

By contrast, food intolerances are biochemical reactions that occur because the body lacks the particular enzyme necessary to break down the chemicals in the food properly. What happens with a food intolerance is that the food "leaks" out of the gut into the bloodstream. The body will occasionally misinterpret this food as a foreign invader and will develop an inflammatory assault causing symptoms as mentioned above.

For example, people can develop an intolerance to a food that they thought was healthy, like blueberries, but in reality it may be causing their health problems. That is why this test is so valuable as it helps us see exactly what a patient is intolerant to rather than trying to go through an elimination diet for each of the 200 foods it can test.
